To crack coconuts take the blunt end of a large knife or a mallet and hit coconut in the middle rotating in circles. The coconut will begin to crack. When it does, strain the coconut water into another container. I substitute the coconut water for the water in making my smoothie. Continue cracking until coconut is in half.
Prepare a smoothie of your choice in your Vitamix or high speed blender – find smoothie recipes at MyScoop.
Fill each coconut about 2/3 full with smoothie and then arrange toppings. If your coconut does not sit up on its own you may want to place in bowl. This is fun breakfast in bed idea or great for a party.
*An even simpler idea – instead of smoothie bowls just use the coconuts as fruit bowls.
